It's unlikely that you need to change headers for the display to work. If
you simulated a non-CTI scanner, you will likely have to update the geometry
fields, but that doesn't change anything about the actual values in the
sinogram.

Best to use " list_projdata_info -all yourfile.S" (or "manip_projdata
yourfile.S" if you don't have STIR 2.2) to see what the values are in the
sinogram. If they're zero, I suspect something went wrong in your
simulation. Also check GATE log files.
