Hi Sam!
As far as I know, the ion source realistically models radioactive decay. So this includes all x-rays, gammas, positron emission, etc. I believe this is all handled by Geant4 and not explicitly by Gate.
In fact, when you installed Geant4 before installing Gate, you had to include all the extra data files for Geant4. Among these data files were the radioactive decay and the low-energy electromagnetic data files for every element and isotope up to Z = 100, I believe.
You may want to look at the Geant4 documentation for more info on this.
